gluten-free Torta delle Monache recipe

Ingredients:

  • Ricotta cheese – 250g (well-drained)

  • Almond flour – 200g

  • Eggs – 3 large

  • Sugar – 150g

  • Lemon zest – From 1 lemon

  • Vanilla extract – 1 teaspoon (optional)

  • Baking powder (gluten-free) – 1 teaspoon

  • Salt – A pinch

  • Butter – 100g (melted), plus extra for greasing the pan

  • Powdered sugar – For dusting (optional)
