Carciofini sott’olio

Ingredients:

  • Baby artichokes – 1 kg (about 2.2 lbs) (young, small artichokes work best)

  • Extra virgin olive oil – 500 ml (about 2 cups)

  • White wine vinegar – 100 ml (about 1/2 cup)

  • Garlic – 2-3 cloves, peeled and thinly sliced

  • Fresh herbs (such as thyme, rosemary, and bay leaves) – a few sprigs of each

  • Lemon – 1, cut into wedges (to prevent browning of the artichokes)

  • Salt – to taste

  • Black pepper – freshly ground, to taste

  • Chili flakes – (optional, for a spicy kick)
