Crostini di fegatini

Ingredients:
500g chicken livers (you can also use other livers, like duck)

1 onion (medium-sized, finely chopped)

2 cloves garlic (minced)

1 carrot (finely chopped)

2 tablespoons capers

1/4 cup dry white wine (or red wine, depending on preference)

1 tablespoon tomato paste (optional)

3 tablespoons olive oil (or butter)

Salt and pepper to taste

Fresh rosemary or sage (optional)

1 loaf of Tuscan bread (or any rustic bread), sliced into 1cm thick pieces

Extra olive oil for drizzling
