Polpette di Patate alla Siciliana

Ingredients:

  • Potatoes – 500g (about 4 medium potatoes)

  • Mozzarella cheese – 100g, cut into small cubes (optional, for a gooey center)

  • Pecorino Romano cheese – 50g, grated (or Parmigiano if you prefer)

  • Eggs – 1 large (for binding)

  • Breadcrumbs – 100g (for coating)

  • Fresh parsley – A handful, chopped

  • Salt – To taste

  • Black pepper – To taste

  • Garlic – 1 clove, minced (optional)

  • Cooked ham or salami – 50g, finely chopped (optional)

  • Olive oil – For frying

  • Flour – For dusting
